Griffin Apotheca is endlessly inspired by the history of beer, but we’re committed to laying our own roots. We appreciate old-world styles. We like learning about and experimenting with old techniques. And we believe the process is as important as the product itself.

SUMMERNACHT
Munich Dunkel - Smooth, dark, malty. Summernacht, our Munich-style dunkel, offers the depth of a stout without the weight. This highly-sessionable lager hints at chocolate, toasted walnuts, and fresh-baked bread crust and adds a bit of hoppy bitterness to keep things crisp. Think of it as a dark beer you’d be happy to drink with the summer sun (or any sun, really) on your back.
HONEY ROOT
Ginger Mead - Can you add complexity without losing simplicity? Honey Root argues yes, you can. Brewed with both yeast and helpful bacteria (think kombucha), this ginger beer softens the kick of ginger with a bit of earthy coriander and a hint of sweetness from local honey. Part mead, part kombucha (sort of), all original brew, Honey Root offers a little something extra without getting in the way.
FOLK
Bavarian Weissbier - Borrowing from Bavarian beers of yore, Folk isn’t a replica, it’s a reinvention. An Inland Northwest original that leans on local wheat and barley to balance notes of clove and banana with bright carbonation. Enjoy as sunlight breaks the cloud cover, lingering rain runs off the leaves, and you’re looking for a way to hold back the humidity for just a bit longer.
GRAY SEASON
Grisette - Delicately dry hopped with a crisp finish, Gray Season is a Belgian-style wheat beer known as Grisette. Ours balances mellow spiciness and a hint of citrus with a creamy mouthfeel thanks to historic 6-row barley malt. Then, in keeping with tradition, we veer off course. Grisettes historically use readily available ingredients, so we added local English cider apples for a fresh refresh on this once-common style.
